Savory Sauce Recipe
Turn up the flavor with this savory sauce recipe
1-2 tablespoons of oil
1-2 tablespoons finely chopped onion or shallot
1/4 cup sliced mushrooms
Salt and pepper to taste
1/4 cup brandy
A splash of heavy cream
In a medium saucepan, sauté onion or shallot in oil until soft, about 10 minutes. Add mushrooms and cook until brown, about another 10 minutes. Add salt and pepper to taste. Pour in brandy and deglaze: scrape the bottom of the pan with a spatula and stir as the liquid comes to a boil. Let the mixture boil for only a few seconds. Turn down the heat and cook about five minutes until the mixture is slightly reduced. Add a splash (one tablespoon or less) of heavy cream and heat the sauce through.
